Monk Fruit Glazed Roasted Carrots

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb baby carrots
  • 3 tbsp Sugarless Signature Blend
  • 2 tbsp butter
  • 1 tbsp fresh thyme
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F.
  2. Toss carrots with olive oil, salt, and pepper.
  3. Roast for 20 minutes until tender.
  4. In a pan, melt butter with Sugarless and thyme.
  5. Add roasted carrots and toss until glazed.
  6. Serve immediately.
